MezzaLuna — Roth Käse's expert cheesemakers draw inspiration from some of the great cheeses of Italy to create our MezzaLuna range: new world classics of our own. Family dairies in South Central Wisconsin are the source of fresh milk that allows us to create this line-up of outstanding cheeses, each crafted and cured with care. The result: award-winning, flavorful cheeses perfect for la cucina Italiana yet versatile for a wide-range of culinary applications.

Gorgonzola — This Italian-style blue is distinguished by complex flavors resulting from the freshest raw milk. Cured a minimum of 60 days, assertively piquant yet lusciously creamy.

Recipe Applications:

  • Ideal for green salads and dressings
  • Great addition to a burger, steak, or slab of roast beef
  • Excellent in a flight of blue cheeses

Pair with:

  • Pears, apples, and figs
  • Candied spiced walnuts
  • Port, Madeira or sweet Sherry

Fontina — Inspired by an Italian Alpine favorite, ideal for melting, blends complex robust and meaty flavors with a hint of yeast and wild mushrooms

Recipe Applications:

  • Stir into risotto or fondue
  • Melt on pastas, lasagna, and eggplant or veal cutlets
  • Savory crepes with seafood, or crab-stuffed mushrooms

Pair with:

  • Poultry, Prosciutto, Salame, Coppa

Bambina Fontina — Smaller and more compact with a rich mouthfeel and light tangy finish.

  • Olives and pickled veggies

Smoked Provolone — The classic pizza-and-sandwich melting cheese with a hint of hickory smoke.

Fontiago — A complex original that blends the qualities of two Italian all-stars, starting rich and sweet like Fontina, finishing with the tang of an aged Asiago

Rofumo — Hickory smoke delicately infuses this supple Fontina with a smooth, smoky flavor – almost bacon-like, yet understated and never overpowering. The perfect melting cheese.
